What wood do you usually use to cook with? Always the same? Or does it depend if the food will be directly being smoked by that wood burning?

Just watched this video on YouTube, and I was blown away at the simplicity, yet delicious outcome. I just have a question in regards to the Anko. Is there a specific recipe on how to make from scratch? Or will store bought be fine? Thanks!

This video inspired me to create a new chicken wing dish using the methods and techniques these guys always share with us! Even if you do not have the knife or a forest along a river or a fire pit, there is so much you can learn from watching what they do!

I had chicken wings in the house, but no grapefruit or anko – and I really wanted wings after watching this video! I used their double skewer technique and cooked my wings under the broiler in my oven – which is some what similar to their fire pit. I made a simple sweet and spice sauce using what I had available… apricot jam, orange juice, garlic, sage and red pepper flakes. After the wings were about 50% done, I brushed the sauce onto the wings and kept a close watch until they were done, saucing the wings with each flip over. When the wings were done, I served them on a bed of couscous seasoned with w/ cumin, mixed with some slivered almonds, green peas and some lemon juice.

My chicken wing dish would have never happened if I hadn’t found these videos!!!

So thankful for your wonderful and thoughtful videos!
